Like clouds to bite into: The secret of the airy Japanese pancakes is a special soufflé technique in which stiffly beaten egg whites are carefully lifted under the dough.
The cakes are then baked on an evenly tempered plate. Because of their unique texture, they are also called Kiseki or the miracle pancakes, in Japan.
There, they are often served as a lucky charm at weddings.

How it all began...
​
The story of Luffy Pancake began in December 2017 when our founders, Fred from Paris and Marco from Munich, stopped in Japan on their world trip.
In Tokyo's Shibuya district, they happened to discover a small pancake café - and were immediately blown away by the airy treats that landed on their plates. Back in Europe, they set about recreating these unique desserts.
For two years, they experimented in their own kitchen, weighing, cooling, calculating, foaming and baking. Consulted a Parisian patissier to perfect the recipe and add a subtle French touch to the Japanese pancakes - et voilà!
In the summer of 2020, Luffy Pancakes was born, a word creation of fluffy and lucky, a fluffy lucky treat you eat once and never forget.

Luffy Pancake started as a passion of two Japan lovers - and quickly became a project of many friends who all share the enthusiasm for this wonderful dessert and who all come from different countries: France, Germany, Japan, England....
And so Luffy Pancake is more than a promise of a delicious dessert: it's a network of dear, passionate people that is constantly growing.
